Milk, Cheese & Icecream
For our goats and cheep breeds we have chosen breeds that have suffered a great decline in history due to being deselected by mass production in farming. This is a shame as we believe that mass production should not be the driver, as this compromises on the quality and quantity of some amazing products. The qualities of the milk of the Gentile di Puglia (as well as the clear benefits for meat and the by product of wool) and of Girgentana goats are slowly being recognised again for the use to make cheese.
Conserving the old and traditional breeds before the experience of cheese would have changed for good. There are vast differences in quality of cheese due to the percentages of fatty acids in the milk. Both the Girgentana goats and Gentile di Puglia sheep have exceptional ratios between fat and protein content, making them excellent producers of milk for cheese.
Currently we are growing our flocks of sheep and goats to be ready to make cheese from this exceptional milk for when our set up is complete. We shall be milking them by hand and will be giving the opportunity to come and learn the end to end cheesemaking process on the farm.
