One of the driving factors in selectin Cinta Senese as our primary breed of swine, was the premium quality of the meat when cured. Salami, Prosciutto, Pancetta and cured sausage all demonstrate that extra special quality of the meat providing a vastly superior taste experience to other breed that are commercially reared. Our pigs roam free in Oak woodlands allowing the flavour of the acorns to further enhance the meat.
Although the Cinta Senese is a high fat bred, there has been a lot of research into the type and qualities of the fat. This has demonstrated that the fat is much lower in cholesterol than other pig breeds and also that the qualities are more attuned to Olive Oil than to animal fat. When eating a piece of meat with cured fat on it, it literally dissolves in your mouth unlike other types where the fat is chewy and flavourless.
We are currently looking into converting some of the natural caves under our farm house to use to mature the meat in pure mountain air.
In addition to using our Cinta Senese we also cure both rabbit and goat meat. We make salami's, smoke cured meats and also pate.
We have a variety of our cured meats and pates available in our web shop and via some local delicatessens. We also supply restaurants directly. If you would like to sample our products you are more than welcome to arrange a visit to do so.
